Broccoli is a cruciferous vegetable, full of fantastic nutrients that boost the immune system and may be protective against cancer. Introducing children to the flavor of broccoli early is a great idea, and it can easily be incorporated into mashed potatoes, pasta sauces and other ‘hidden veggie’ recipes.
½ head of broccoli, washed and chopped
½ cup potato, peeled and chopped
½ cup frozen baby peas
Boil the potato in a small amount of water for approximately 10 minutes. Add the broccoli and boil for another 5 minutes. Add the frozen peas and continue boiling for another minute or two until everything is tender. Strain and keep the water, then blitz veggies to desired consistency, adding some cooking liquid as needed. This works well with some poached chicken too.
