Eggs are a wonderful little bundle of nutrition, and both the yolk and whites are very nourishing. Cooked softly makes them a great first fingerfood and encourages independence and learning. As always, watch for signs of possible reactions and follow your Maternal and Child Health Nurse’s advise regarding allergies.
Crack an egg and whisk in a cup until mixed, then add a small sprinkle of grated cheddar cheese. Pour into a pan and cook on a low, flipping over to cook both sides but not allowing it to dry out. Cut into finger sized strips and serve with some soft wholemeal bread strips on the side.
When your baby is a little older and able to tolerate some texture, you can finely chop some spinach, mushroom, cherry tomatoes or grate some carrots to add a nice hit of veggies! Winner!
