Pumpkin is a lovely, smooth and creamy veggie that is loved by many babies (and adults!). They are rich in betacarotene and antioxidants, which are important for eye development, brain health and overall wellbeing too. Cannelini beans are a pulse full of plant proteins, easily digestible and full of fibre. Kale, the dark green goddess of leafy greens, is super rich in minerals such as magnesium, calcium and iron, which babies need for bone development, energy pathways, metabolism and so much more. The addition of good quality extra virging olive oil after cooking (this is to prevent it from heating and becoming rancid) adds some lovely monounsaturated fats to the mix.
