Pumpkin is another wonderful vegetable that is rich in antioxidants and a fantastic source of carbohydrate (=energy) for our bubs. With it’s lovely smooth, mashable texture and slightly sweet flavor it is very popular with babies.

Wash ½ butternut pumpkin and chop into inch wide pieces, leaving the skin on. Put into a baking dish and drizzle with a small touch of virgin coconut oil. Roast in the oven until tender, probably about an hour. Allow to cool, then use a spoon to scrape the flesh from the skin. Pop flesh into a blender and blitz. Add a small amount of water or extra virgin olive oil to adjust thickness. You can add a variety of delicious herbs and spices to spruce up this easy baby food recipe too.
