Silverbeet is an amazing dark green leafy vegetable that has so many health properties. It is a fantastic plant source of iron, magnesium, and other important minerals. It is also rich in antioxidants, chlorophyll and fibre, and it’s never too early to teach your kids that ‘green is good’!
2-3 leaves of silverbeet, washed, stalks removed, and shredded
1-2 carrots, washed, peeled & chopped
Add the veggies with a small amount of water to a pot, put the lid on and steam for 15 minutes until the carrots are tender. Drain the liquid into a cup. Then pulse in a food processor, using some of the cooking liquid to achieve desired consistency.
