Root veggies are healthy and wholesome, full of the earth’s natural minerals and antioxidants. They are a great source of complex carbohydrates, which provide the needed energy source for our bubs. Adding a small amount of a healthy fat (eg butter, coconut oil or olive oil) will greatly increases the absorption of nutrients, particularly fat soluble nutrients such as Vitamin A, D, E and K. Healthy saturated and unsaturated fats are also essential for our bubs overall health and development.
Simply wash, peel and boil sweet potato, pumpkin and carrot (or try white potato, parsnip etc) in a little water until soft and mashable. Drain the water into a cup. Add a touch of butter to the hot veggie mix and mash with a potato masher until smooth. Add some of the cooking liquid if needed.
